A fragrant Persian lentil rice layered with caramelized onions, raisins, and warm spices. Persian Jewish cooking often emphasizes its sweet-savory contrast.

Ingredients

  • 2 cups basmati rice
  • 1 cup brown or green lentils
  • 2 large onions, thinly sliced
  • 1/2 cup raisins
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 3 tablespoons oil
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper

Instructions

    Cook the lentils in water until just tender, then drain.

    Parboil the rice in salted water until partly cooked, then drain.

    In a skillet, fry the onions in oil until deeply golden and caramelized.

    Add the raisins, cinnamon, cumin, turmeric, salt, and pepper to the onions and cook briefly.

    Layer the rice, lentils, and onion-raisin mixture in a pot, repeating as needed.

    Cover the pot tightly and steam on low heat until the rice is fluffy and fragrant, about 35 minutes.

    Gently toss before serving.

Kosher notes

Pareve as written and suitable for meat or dairy meals. Some families add meat separately.
