A North African fish dish simmered in a spicy tomato-garlic sauce bright with cumin, paprika, and cayenne. It is a beloved Shabbat fish course across Libyan and Moroccan Sephardic communities.

Ingredients

  • 2 lb white fish fillets such as cod, bass, or perch
  • 3 tbsp olive oil
  • 6 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 2 tsp ground cumin
  • 2 tsp sweet paprika
  • 1/4 tsp cayenne, or to taste
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped parsley
  • 1 cup water

Instructions

    Heat the olive oil in a wide skillet or shallow pot and gently sauté the garlic until fragrant.

    Add the crushed tomatoes, tomato paste, cumin, paprika, cayenne, salt, pepper, and water and simmer for 10 minutes.

    Lay the fish fillets into the sauce in a single layer.

    Spoon some sauce over the fish, cover, and cook gently until the fish is just done, 10 to 15 minutes.

    Sprinkle with chopped parsley and let the dish rest for a few minutes.

    Serve warm with challah or bread to soak up the spicy sauce.

Kosher notes

Fish is treated as pareve, making this suitable before a meat meal. Use separate fish utensils according to family custom.
