A Portuguese sausage developed by crypto-Jews as a pork-free link made from poultry, bread, garlic, and spices, then stuffed and smoked or roasted.

Ingredients

  • 1 pound cooked chicken thigh meat, shredded
  • 1/2 pound cooked turkey meat, shredded
  • 3 cups stale bread, torn
  • 1 1/2 cups hot poultry broth
  • 8 garlic cloves, minced
  • 2 teaspoons sweet paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Natural sausage casings or parchment for shaping

Instructions

    Soak the bread in hot broth until softened, then mash into a thick paste.

    Mix in the shredded poultry, garlic, paprika, salt, and pepper until cohesive.

    Stuff the mixture into casings, or shape into compact sausage logs using parchment.

    Chill until firm, then roast or smoke gently until browned and heated through.

    Slice and pan-fry before serving if desired.

Kosher notes

Use only kosher poultry and casings; this dish was historically made specifically to avoid pork.
