Almond Milk (Hariri)

Hariri is a traditional Iraqi Jewish almond drink valued for its light, digestible richness and often used to break a fast. Blanched almonds are soaked, strained, sweetened, and delicately perfumed with floral water.

Ingredients

  • 2 cups blanched almonds
  • 4 cups boiling water
  • 1/4 to 1/3 cup sugar
  • 1 teaspoon rosewater or orange blossom water
  • 1 pinch kosher salt
  • Ice cubes for serving (optional)

Instructions

    Grind the blanched almonds in a food processor until very fine, like a coarse meal.

    Place the ground almonds in a bowl and pour the boiling water over them.

    Cover and let the mixture soak for about 2 hours so the almonds release their flavor.

    Pour the mixture through a cheesecloth-lined sieve into a clean bowl and squeeze firmly to extract as much liquid as possible.

    Sweeten the strained milk with sugar and add a tiny pinch of salt to round out the flavor.

    Stir in the rosewater or orange blossom water sparingly.

    Chill thoroughly before serving, or pour over ice if desired.

    Shake or stir before pouring, since natural almond sediment may settle.

Kosher notes

Pareve and useful when a non-dairy drink is desired. Make with clean pareve equipment if serving after meat meals or for mixed company observing strict separation.
