Alsatian Kugel

An Alsatian Jewish kugel, often noodle- or potato-based, lightened with local dairy and enriched with caramelized onions. It is gentler and creamier than many heavier Eastern European versions.

Ingredients

  • 12 oz wide egg noodles
  • 3 tbsp butter
  • 3 large onions, thinly sliced
  • 4 large eggs
  • 1 cup fromage blanc, cottage cheese, or farmer cheese
  • 1/2 cup sour cream or heavy cream
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

    Preheat the oven to 375°F (190°C) and butter a 9-by-13-inch baking dish.

    Cook the egg noodles in salted water until just tender, then drain.

    Meanwhile, melt the butter in a skillet and cook the onions over medium-low heat until deeply caramelized, about 20 minutes.

    In a large bowl, whisk together the eggs, cheese, sour cream, salt, and pepper.

    Fold in the cooked noodles and caramelized onions until evenly combined.

    Spread the mixture in the baking dish and bake for 35 to 40 minutes, until set and golden on top.

    Let rest for 10 minutes before serving.

Kosher notes

Because this version uses local dairy, it should be served in a dairy meal. A potato-and-schmaltz version could be adapted for meat service.
