A thin, lacy rice-and-coconut pancake associated in Bene Israel tradition with the Passover season and festive breakfasts.
Ingredients

- •1 1/2 cups coconut milk
- •1 cup water
- •1 tablespoon sugar
- •1/2 teaspoon kosher salt
- •1/2 teaspoon dry yeast, optional
- •Oil for greasing the pan
Instructions

Whisk the rice flour, coconut milk, water, sugar, salt, and yeast if using into a smooth batter.

Let the batter rest until slightly airy, if time allows.

Heat an appam pan or small nonstick skillet and lightly grease it.

Pour in a ladle of batter and swirl so the edges become thin and lacy while the center stays thicker.

Cover and cook until set, then remove without flipping.
