A distinctively Balkan-Sephardic winter stew made by slow-cooking beef or lamb with pickled cabbage (sauerkraut).
Ingredients
- •2 pounds beef or lamb, cut into chunks
- •1 large onion, diced
- •4-5 cloves garlic, minced
- •4 cups pickled cabbage (sauerkraut)
- •2 medium carrots, sliced
- •2 medium potatoes, diced
- •4 cups beef or chicken broth
- •2 tablespoons olive oil
- •1 teaspoon paprika
- •Salt and pepper to taste
Instructions

Heat olive oil in a large pot over medium heat.

Add diced onion and minced garlic; sauté until softened.

Add the meat and brown on all sides.

Stir in paprika, salt, and pepper.

Add the pickled cabbage, carrots, and potatoes to the pot.

Pour in the broth, ensuring the ingredients are covered.

Bring the mixture to a boil, then reduce heat to low.

Cover and let simmer for 1.5 to 2 hours, or until the meat is tender.

Adjust seasoning if necessary before serving.
