A cold leek and tomato stew cooked with lemon and olive oil, reflecting the Aegean influence on Turkish Jewish cuisine.

Ingredients

  • 4 large leeks, cleaned and sliced
  • 2 cups diced ripe tomatoes
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon paprika
  • Fresh parsley for garnish

Instructions

    Heat olive oil in a large skillet over medium heat.

    Add the sliced leeks and sauté until they are soft and translucent, about 5-7 minutes.

    Stir in the diced tomatoes and cook for another 5 minutes until they begin to break down.

    Add the lemon juice, salt, pepper, and paprika; mix well to combine.

    Reduce the heat and let it simmer for about 15 minutes, stirring occasionally.

    Remove from heat and let it cool to room temperature.

    Transfer to a serving dish and refrigerate for at least 2 hours before serving.

    Garnish with fresh parsley before serving.

    Serve cold as a refreshing appetizer or side dish.
