Arroz con garbanzos
A spiced rice-and-chickpea dish reflecting classic Iberian staples. Caramelized onions, raisins, bay leaf, and turmeric give it a sweet-savory profile common in Sephardic cooking.
Ingredients

- •2 large onions, thinly sliced
- •3 cloves garlic, minced
- •1 1/2 cups long-grain rice
- •1 can (15 ounces) chickpeas, drained and rinsed
- •1/3 cup raisins
- •1 bay leaf
- •1/2 teaspoon turmeric
- •1/2 teaspoon ground cumin
- •3 cups vegetable broth or water
- •1 teaspoon salt
- •1/4 teaspoon black pepper
Instructions

Heat the olive oil in a pot over medium heat and cook the onions slowly until deeply caramelized.

Add the garlic and cook for 1 minute more.

Stir in the rice, chickpeas, raisins, bay leaf, turmeric, cumin, salt, and pepper.

Pour in the broth or water and bring to a boil.

Reduce the heat to low, cover, and simmer for 18 to 20 minutes until the rice is tender.

Turn off the heat and let the pot rest, covered, for 10 minutes.

Fluff the rice gently with a fork and remove the bay leaf.
