A Bene Israel form of unleavened bread for Passover, made simply from flour and water and cooked quickly on a tava griddle. It reflects Indian technique applied to the ancient requirement of matzo.

Ingredients

  • •2 cups wheat flour
  • •3/4 cup water
  • •1/2 tsp salt, optional
  • •extra flour for rolling

Instructions

  1. 1

Mix the flour and water quickly into a stiff dough, adding salt only if your custom permits.

  2. 2

Knead briefly just until smooth, taking care to work efficiently for Passover timing.

  3. 3

Divide into small balls and roll each one into a very thin round.

  4. 4

Prick the surface to prevent puffing.

  5. 5

Cook on a hot tava or dry griddle for about 1 to 2 minutes per side until dry and lightly spotted.

  6. 6

Cool completely and store in an airtight container.
