Beef Frankfurters (Hot Dogs)

Kosher-style all-beef frankfurters popularized by German-Jewish immigrants as an alternative to pork sausages. Smoky, snappy, and heavily seasoned, they became central to American street food and ballpark culture.

Ingredients

  • 2 lb well-chilled kosher beef
  • 1/2 lb beef fat
  • 2 tsp kosher salt
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp white pepper
  • 1/2 tsp coriander
  • 1/4 tsp allspice
  • 1/2 cup ice water
  • Natural kosher beef casings
  • 8 hot dog buns
  • Mustard and sauerkraut for serving

Instructions

    Cut the beef and fat into chunks and chill them very thoroughly.

    Grind the meat mixture finely, then mix with salt, spices, and ice water until sticky and emulsified.

    Rinse the casings and stuff them firmly, twisting into sausage lengths.

    Poach the sausages gently until they are set, then chill.

    Smoke the frankfurters lightly if desired for classic deli flavor.

    Grill or griddle the hot dogs until heated through and lightly blistered.

    Place in buns and top with mustard or sauerkraut.

Use only kosher beef and beef casings; many home cooks buy prepared kosher frankfurters rather than making them from scratch.
