Savory hand pies of Sephardic and Ottoman Jewish cuisine, made with thin dough and filled with vegetables, cheese, or meat; this version uses a pareve potato filling.

Ingredients

  • 1 package filo or yufka dough
  • 1/3 cup olive oil
  • 3 medium potatoes, boiled and mashed
  • 1 small onion, finely chopped
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped parsley
  • 1 egg beaten with 1 tablespoon water for brushing

Instructions

    Cook the onion in a little olive oil until soft, then mix with mashed potatoes, salt, pepper, and parsley.

    Lay out the dough and keep it covered so it does not dry out.

    Cut or portion the dough, place filling on each piece, and fold into triangles or crescents.

    Brush with egg wash and place on a lined baking sheet.

    Bake until crisp and golden brown.

Kosher notes

Filling determines status; potato or spinach versions are pareve, cheese versions are dairy, and meat versions are meat.
