A bright beet soup common in Eastern European Jewish kitchens, served hot or cold and often finished with dill; dairy garnish is optional.

Ingredients

  • 6 medium beets, peeled and diced
  • 1 onion, chopped
  • 1 carrot, chopped
  • 6 cups vegetable broth or water
  • 2 tablespoons lemon juice
  • 1 tablespoon sugar
  • 1 teaspoon kosher salt
  • 2 tablespoons chopped fresh dill

Instructions

    Place the beets, onion, carrot, and broth in a soup pot and bring to a boil.

    Reduce to a simmer and cook until the vegetables are very tender.

    Blend partially or fully, depending on whether you prefer a chunky or smooth soup.

    Season with lemon juice, sugar, salt, and dill, balancing sweet and sour to taste.

    Serve warm or chill thoroughly and serve cold.

Kosher notes

The soup is pareve as written; garnish with sour cream only for a dairy meal.
