A nutty, seed-studded cookie scented with orange blossom water, traditionally served by Libyan and Tunisian Jews to break the Yom Kippur fast. Crisp yet tender, boulou is designed to be restorative and aromatic, pairing well with tea or coffee.

Ingredients

  • 3 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp ground anise or fennel seed
  • 1/2 cup neutral oil
  • 3 eggs
  • 2 tbsp orange blossom water
  • 1/2 cup toasted sesame seeds
  • 1/2 cup chopped almonds or mixed nuts
  • 1/4 cup raisins or additional seeds, optional
  • 1 egg yolk, for brushing

Instructions

    Preheat the oven to 350°F (175°C) and line a baking sheet with parchment.

    In a large bowl, whisk together the flour, sugar, baking powder, and ground anise or fennel.

    Add the oil, eggs, and orange blossom water, mixing until a soft dough forms.

    Fold in the sesame seeds, nuts, and raisins if using.

    Let the dough rest for 10 minutes so the flour hydrates and the flavors meld.

    Shape the dough into small rounds, ovals, or short logs and place them on the baking sheet.

    Brush the tops lightly with egg yolk for shine.

    Bake for 18 to 22 minutes until lightly golden and set.

    Cool before serving; the cookies keep well in an airtight tin.

Kosher notes

Usually pareve when made with oil. If serving after a fast, pair with pareve drinks or dairy according to household custom.
