Flaky Ottoman-style pastries filled with savory vegetables such as potato, spinach, or eggplant and baked until golden. Sephardic cooks developed distinctive shapes to identify fillings and preserve artisanal tradition.

Ingredients

  • 1 lb puff pastry or filo dough
  • 2 medium potatoes, boiled and mashed
  • 1 cup cooked spinach, squeezed dry and chopped
  • 1 small eggplant, roasted and mashed
  • 1 small onion, finely chopped
  • 3 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 egg, beaten, for glaze
  • 1 tbsp sesame seeds, optional

Instructions

    Prepare a filling by sautéing the onion in olive oil and mixing it with the mashed potatoes, spinach, and eggplant.

    Season the filling with salt and pepper and let it cool completely.

    Roll out the pastry and cut into squares or strips appropriate for folding.

    Place a spoonful of filling in each piece and fold into triangles, coils, or half-moons, sealing the edges well.

    Brush with beaten egg and sprinkle with sesame seeds if using.

    Bake at 400°F until deeply golden and flaky, about 25 to 30 minutes.

Kosher notes

A pareve filling makes the pastries flexible for either meat or dairy meals. Distinctive shaping is traditionally used to identify fillings.
