Deep-fried yeast dough fritters served with honey or sugar syrup, specifically prepared by Turkish Jews for Hanukkah celebrations.

Ingredients

  • 2 cups all-purpose flour
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 cup warm water (110°F)
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons olive oil (plus more for frying)
  • Honey or sugar syrup for serving

Instructions

    In a large bowl, dissolve the yeast and sugar in the warm water. Let it sit for about 10 minutes until frothy.

    Add the flour, salt, and cinnamon to the yeast mixture. Stir until a dough forms.

    Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

    Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Heat oil in a deep frying pan over medium heat. You want enough oil for deep frying.

    Once the dough has risen, punch it down and scoop tablespoon-sized portions with a spoon or your hands.

    Carefully drop the dough pieces into the hot oil, frying them in batches until golden brown, about 2-3 minutes on each side.

    Use a slotted spoon to remove the fritters and drain them on paper towels.

    Drizzle with honey or sugar syrup before serving.
