Roman Jewish whole fried artichokes opened like flowers and fried until crisp, a defining specialty of the historic Jewish Ghetto in Rome.
Ingredients
- •8 Romanesco artichokes
- •1 lemon
- •1 1/2 teaspoons kosher salt
- •3 cups olive oil for frying
- •Freshly ground black pepper
Instructions

Trim the artichokes aggressively, removing tough outer leaves and the choke, and rub with lemon.

Soak briefly in acidulated water, then drain and dry well.

Fry the artichokes once at moderate heat until tender.

Drain, gently press them open like flowers, and fry a second time at higher heat until crisp.

Season with salt and pepper and serve hot.
Kosher notes
Naturally pareve when fried in olive oil; excellent with either meat or dairy menus.
