Cheese Sambusak

Small savory pastries filled with salty cheese and often topped with sesame seeds, a favorite in Iraqi Jewish homes for festive dairy meals such as Shavuot and also for Purim. They are usually baked until crisp and golden.

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 1 teaspoon sugar
  • 1 tablespoon instant yeast
  • 1/4 cup vegetable oil
  • 1 cup warm water
  • 8 ounces feta cheese, crumbled
  • 8 ounces farmer cheese or mozzarella, grated
  • 1 egg
  • 2 tablespoons chopped parsley
  • 2 tablespoons sesame seeds

Instructions

    Mix the flour, salt, sugar, and yeast in a bowl, then add the oil and warm water and knead until smooth.

    Cover the dough and let it rise until doubled, about 1 hour.

    Combine the feta, farmer cheese, egg, and parsley in a bowl to make the filling.

    Preheat the oven to 375°F (190°C) and line a baking sheet with parchment.

    Divide the dough into small balls and roll each one into a circle about 4 inches wide.

    Place a spoonful of cheese filling in the center of each circle.

    Fold into a half-moon or triangle shape and press the edges firmly to seal.

    Arrange on the baking sheet, brush lightly with beaten egg if desired, and sprinkle with sesame seeds.

    Bake for 20 to 25 minutes, until golden brown and crisp.

Kosher notes

Use kosher cheeses and serve only with dairy or pareve foods. If using hard cheeses, ensure they are made with kosher rennet.
