Chik Halwa
चिक हलवा

A Bene Israel sweet made from the starchy liquid extracted from soaked wheat and cooked with jaggery, coconut milk, and fragrant spices. The result is glossy, dense, and jelly-like, often served for celebrations.
Ingredients
- •1 cup whole wheat berries, soaked overnight
- •1 1/2 cups jaggery, grated
- •1 cup coconut milk
- •1/2 tsp ground cardamom
- •1/4 tsp ground nutmeg
- •2 tbsp ghee substitute or neutral oil
- •2 tbsp chopped nuts for garnish

Drain the soaked wheat and grind it with enough water to form a slurry, then strain to extract the milky wheat liquid.

Let the liquid settle briefly and discard any excess clear water from the top if needed.

Pour the wheat extract into a saucepan with the jaggery and coconut milk.

Cook over medium-low heat, stirring constantly, until thick, glossy, and pulling away from the sides of the pan.

Stir in the cardamom, nutmeg, and oil near the end of cooking.

Spread into a greased dish or spoon into bowls, garnish with nuts, and cool slightly before serving.
Kosher notes
Using coconut milk keeps the sweet pareve. Verify jaggery and packaged ingredients if strict kosher certification is required.
