A tangy appetizer of fried zucchini marinated with vinegar, garlic, and mint. This dish reflects the fried-and-marinated vegetable style common in Italian Jewish kitchens.

Ingredients

  • 4 medium zucchini
  • 1 cup extra-virgin olive oil, for frying
  • 1/3 cup white wine vinegar
  • 2 cloves garlic, thinly sliced
  • 1/4 cup fresh mint leaves, torn
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

    Wash the zucchini and slice them into thin, even rounds.

    Heat the olive oil in a wide skillet and fry the zucchini in batches until lightly golden on both sides.

    Transfer the fried zucchini to paper towels and season lightly with salt.

    In a small saucepan or bowl, combine the vinegar, garlic, mint, pepper, and a little salt to make the marinade.

    Layer the zucchini in a shallow dish, spooning some marinade over each layer.

    Let the dish cool, then cover and marinate for at least 2 hours, preferably overnight.

    Serve at room temperature as an antipasto or side dish.

Kosher notes
