Crostata di Ricotta

A Roman Jewish tart with a pastry crust enclosing sweetened ricotta and sour cherries, associated with the old Ghetto bakeries.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter
  • 2 eggs, divided
  • 1 1/2 cups ricotta cheese
  • 1/2 cup sour cherry preserves or visciole
  • 1 teaspoon lemon zest

Instructions

    Make a pastry dough with flour, sugar, butter, 1 egg, and a little cold water, then chill it.

    Mix the ricotta with the remaining egg and lemon zest until smooth.

    Roll out most of the dough and line a tart pan.

    Spread in the sour cherry preserves, then the ricotta mixture, and top with a lattice or full cover of dough.

    Bake until golden and cool before slicing.

A dairy dessert; use kosher ricotta and serve separately from meat meals.
