Dabo

A sweet, spiced Beta Israel Sabbath bread, sometimes baked wrapped in banana leaves for fragrance and moisture. Honey, coriander, fenugreek, and nigella give it a festive and distinctive profile suitable for Shabbat or the sweet symbolism of the New Year.

Ingredients

  • 4 cups wheat flour
  • 2 1/4 tsp active dry yeast
  • 1 1/4 cups warm water
  • 1/3 cup honey
  • 1/4 cup vegetable oil
  • 1 tsp kosher salt
  • 1 tsp nigella seeds
  • 1 tsp ground coriander
  • 1/2 tsp ground fenugreek
  • Banana leaves or parchment, optional

Instructions

    Dissolve the yeast in the warm water with a spoonful of the honey and let it foam for 5 to 10 minutes.

    In a large bowl, combine the flour, salt, nigella, coriander, and fenugreek.

    Add the yeast mixture, remaining honey, and oil and knead until a soft, smooth dough forms.

    Cover and let rise until doubled, about 1 to 1 1/2 hours.

    Shape into a round loaf and, if desired, wrap loosely in softened banana leaves or place on parchment.

    Let rise again for 30 minutes while the oven heats to 375°F.

    Bake for 35 to 40 minutes until the loaf is golden and sounds hollow when tapped.

    Cool before slicing and serving.
