A home-style Persian tomato rice, simple and comforting, with onions, garlic, and warm spice. It is a practical everyday rice dish in Iranian cooking and fits naturally into Persian Jewish meals.
Ingredients
- •2 cups rice
- •4 ripe tomatoes, chopped
- •1 medium onion, chopped
- •2 cloves garlic, minced
- •1 teaspoon turmeric
- •1/2 teaspoon black pepper
- •1 1/2 teaspoons kosher salt
- •3 tablespoons oil
- •3 cups water or vegetable broth
Instructions

Heat the oil in a pot and sauté the onion until soft and lightly golden.

Add the garlic and turmeric and stir for 30 seconds.

Add the chopped tomatoes, salt, and pepper, and cook until the tomatoes break down into a sauce.

Stir in the rice and coat it well with the tomato mixture.

Pour in the water or broth, bring to a boil, then reduce to low heat and cover.

Cook until the liquid is absorbed and the rice is tender, about 25 minutes.

Rest for 10 minutes before fluffing and serving.
