A comforting one-pot Persian tomato and potato rice with onion, garlic, and warming spices. It is filling, practical, and common as an everyday family dish.

Ingredients

  • 2 cups basmati rice
  • 2 medium potatoes, diced
  • 3 tomatoes, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon black pepper
  • 1 1/2 teaspoons kosher salt
  • 3 tablespoons oil
  • 3 1/4 cups water

Instructions

    Heat the oil in a pot and sauté the onion until translucent.

    Add the garlic and diced potatoes and cook for several minutes until the potatoes begin to color.

    Stir in the tomatoes, turmeric, cinnamon, salt, and pepper and cook until the tomatoes soften.

    Add the rice and stir to coat it in the seasoned tomato mixture.

    Pour in the water, bring to a boil, then cover and reduce to low heat.

    Cook until the rice is tender and the potatoes are soft, about 30 minutes.

    Rest briefly before fluffing and serving.

Kosher notes

Pareve as written. Some cooks add meat, but this version works with any meal type.
