A light Persian apple refreshment of shredded apples, rosewater, water, and sugar. In Persian Jewish custom it is especially associated with breaking the Yom Kippur fast, though it also works as an everyday cooling drink.

Ingredients

  • 3 crisp apples, peeled or unpeeled and coarsely shredded
  • 3 cups cold water
  • 1/4 cup sugar
  • 1 tablespoon rosewater
  • 1 tablespoon lemon juice, optional
  • Ice, for serving

Instructions

    Shred the apples into a bowl, catching as much juice as possible.

    In a pitcher, stir together the water, sugar, rosewater, and lemon juice until the sugar dissolves.

    Add the shredded apples and their juices to the liquid.

    Chill thoroughly for at least 30 minutes.

    Stir well and serve cold over ice, spooning some apple shreds into each glass.

Kosher notes

Pareve and suitable after a fast. Check packaged rosewater for kosher certification.
