A Romanian-Hungarian Ashkenazi mock gefilte fish made with poultry or veal instead of fish, seasoned with onions, carrots, sugar, salt, and especially white pepper to evoke the familiar flavor profile of gefilte fish. It is shaped as a loaf or patties and poached gently.

Ingredients

  • 2 lb ground chicken or turkey, or finely ground veal
  • 1 large onion, very finely chopped
  • 2 medium carrots, finely grated
  • 2 large eggs
  • 1/2 cup matzah meal or fine breadcrumbs
  • 2 tsp salt
  • 1 tbsp sugar
  • 2 tsp ground white pepper
  • 1/4 tsp black pepper
  • 6 cups chicken stock or water, for poaching
  • 1 carrot, sliced, for the poaching liquid
  • 1 onion, sliced, for the poaching liquid

Instructions

    Place the ground poultry or veal in a large bowl and add the finely chopped onion, grated carrots, eggs, and matzah meal.

    Season the mixture with salt, sugar, white pepper, and a little black pepper, then mix until evenly combined.

    Let the mixture rest for 10 to 15 minutes so it firms slightly and the flavors meld.

    Shape the mixture into oval patties or into one compact loaf, according to preference.

    In a wide pot, bring the stock or water to a gentle simmer with the sliced carrot and onion.

    Lower the patties or loaf into the liquid, cover partially, and poach gently for 35 to 45 minutes until cooked through.

    Remove carefully and cool slightly before slicing or serving whole patties.

    Serve warm or chilled, with some of the poaching vegetables alongside.

Kosher notes

If using veal or poultry, keep the dish strictly meat and avoid dairy accompaniments. Use kosher meat and matzah meal.
