Falshe Fish(Mock Gefilte Fish)

A Hungarian Jewish Passover substitute for gefilte fish made from ground poultry or veal rather than fish. It was used by some communities, including Satmar circles, as a flavorful ceremonial stand-in, seasoned assertively with white pepper and poached like a loaf or quenelles.
Ingredients
- •2 lb ground chicken, turkey, or veal
- •2 medium onions, finely grated
- •2 carrots, finely grated
- •3 eggs
- •1/2 cup matzo meal
- •2 tsp kosher salt
- •1 1/2 tsp white pepper
- •1/4 tsp black pepper
- •1 tsp sugar
- •1 carrot, sliced for poaching broth
- •1 onion, sliced for poaching broth
- •6 cups water or light chicken stock
Instructions

Mix the ground meat with the grated onions, grated carrots, eggs, matzo meal, salt, white pepper, black pepper, and sugar until well combined.

Let the mixture rest for 15 minutes so the matzo meal hydrates and the texture firms slightly.

Shape the mixture into an oval loaf, large quenelles, or thick patties according to family custom.

In a wide pot, bring the water or stock to a gentle simmer with the sliced carrot and onion.

Lower in the shaped mock fish carefully, cover partially, and poach gently for 45 to 60 minutes until fully cooked.

Remove and cool slightly, then slice if using a loaf shape.

Serve chilled or at room temperature with some poaching vegetables and horseradish if desired.
Kosher notes
Suitable for Passover when made with kosher-for-Passover matzo meal and certified poultry or veal.
