Traditional fried spiral or ribbon pastries from medieval Iberian Jewish cuisine, often associated with festive occasions. They are crisp, delicate, and usually finished with honey or syrup.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 1/2 cup warm water, plus more as needed
  • Oil for deep frying
  • 1/2 cup honey
  • 2 tablespoons water
  • 1 teaspoon orange blossom water or lemon zest (optional)

Instructions

    Mix the flour and salt in a bowl, then add the olive oil and warm water to form a smooth dough.

    Knead for 5 to 7 minutes until elastic, then cover and let rest for 30 minutes.

    Divide the dough into small pieces and roll each one very thin.

    Cut or stretch the dough into ribbons or strips and shape into spirals or loose twists.

    Heat frying oil to 350°F (175°C) and fry the pastries in batches until crisp and golden.

    Drain on paper towels while you warm the honey with the water and orange blossom water or lemon zest if using.

    Drizzle or lightly soak the hot pastries with the honey syrup.

    Cool slightly and serve as a holiday sweet.

Kosher notes

Pareve when fried in clean oil. A festive fried sweet suitable for Hanukkah tables.
