Fijeula / Fazuelos

Delicate Moroccan Jewish fried pastries made from thin dough shaped into curls or rosettes and glazed with honey or citrus syrup. They are festive sweets associated especially with Purim and also Hanukkah.

Ingredients

  • 3 cups flour
  • 3 eggs
  • 2 tbsp oil
  • 1/4 cup water, as needed
  • 1 tbsp sugar
  • 1/4 tsp salt
  • oil for frying
  • 1/2 cup honey
  • 2 tbsp orange juice or lemon juice
  • 1 tsp orange zest

Instructions

    Make a smooth dough from the flour, eggs, oil, sugar, salt, and enough water to bring it together.

    Knead until elastic, cover, and let rest for 30 minutes.

    Roll the dough very thin and cut into strips or shapes suitable for curling into rosettes.

    Fry the shaped dough in hot oil until golden and crisp, then drain well.

    Warm the honey with the citrus juice and zest to make a light glaze.

    Dip or drizzle the pastries with the glaze and let them set before serving.

Kosher notes

Usually dairy-free despite the egg dough. Fry in clean oil and avoid butter-based glazes to keep the pastries pareve.
