A classic Hungarian Jewish layered pastry-cake made with thin dough and distinct strata of apple, walnut, poppy seed, and plum jam. It is especially associated with festive baking and is one of the signature sweets of Hungarian Jewish homes.
Ingredients
- •3 cups all-purpose flour
- •1/2 tsp kosher salt
- •1 tbsp sugar
- •1 tsp baking powder
- •3/4 cup cold vegetable shortening or margarine
- •2 eggs
- •1/4 cup orange juice or water
- •1 cup plum jam
- •2 cups tart apples, peeled and grated
- •1 tbsp lemon juice
- •1/4 cup sugar
- •1 1/2 cups ground walnuts
- •1/3 cup sugar for walnut layer
- •1/2 tsp cinnamon
- •1 1/2 cups ground poppy seeds
- •1/2 cup sugar for poppy layer
- •1/2 cup raisins
- •1/4 cup water or apple juice
- •1 egg yolk for brushing

Make the dough by mixing flour, salt, sugar, and baking powder, then cut in the shortening or margarine until crumbly.

Add the eggs and orange juice and knead just until a smooth dough forms; divide into 4 equal pieces and chill for 30 minutes.

Cook the grated apples with lemon juice and sugar for a few minutes to remove excess moisture, then cool.

Mix the walnuts with sugar and cinnamon for one filling, and mix the poppy seeds with sugar, raisins, and water or juice for the other filling.

Roll out one piece of dough and fit it into a lined baking pan; spread with plum jam, then add the second dough layer and the walnut filling.

Add the third dough layer and spread the apple filling evenly over it.

Top with the fourth dough layer and spread the poppy seed mixture over or between final layers according to pan shape and family style, sealing the edges neatly.

Brush with egg yolk, prick the top lightly, and bake at 350°F (175°C) for 45 to 55 minutes until set and golden.

Cool completely before slicing so the layers stay defined.
Kosher notes
Traditionally made pareve in kosher homes so it can be served after meat meals; use pareve fat instead of butter.
