A foundational fava bean dish often slow-cooked overnight as a Shabbat staple. Egyptian Jewish versions may include whole eggs cooked in the pot, with the beans served whole or mashed into a savory paste.

Ingredients

  • 2 cups dried fava beans, soaked overnight
  • 6 cups water
  • 1 teaspoon kosher salt
  • 4 cloves garlic, lightly crushed
  • 1 teaspoon cumin
  • 4 eggs in their shells (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/4 cup chopped parsley
  • 1 tomato, finely chopped for garnish

Instructions

    Drain the soaked fava beans and place them in a heavy pot with the water, salt, garlic, and cumin.

    Nestle in the whole eggs if using, making sure they are covered with water.

    Bring the pot to a boil, skim any foam, then reduce to the lowest heat.

    Cover tightly and cook for 6 to 8 hours, or overnight, until the beans are very tender.

    Remove the eggs and peel them if used.

    Mash some or all of the beans to the texture you prefer, then stir in the olive oil and lemon juice.

    Taste and adjust seasoning with more salt or cumin if needed.

    Serve warm, topped with parsley and tomato, alongside the cooked eggs and bread.

Kosher notes

Eggs are pareve, so this dish can remain pareve if prepared in a neutral pot and served without meat or dairy additions.
