Gazelle Horns(Kaab el Ghzal)

Elegant crescent-shaped Moroccan pastries filled with almond paste scented with cinnamon and orange blossom water. In Jewish homes they are especially associated with festive occasions such as Rosh Hashanah and Purim.

Ingredients

  • For the filling: 2 cups blanched almonds
  • 1/2 cup sugar
  • 1 tsp ground cinnamon
  • 2 tbsp orange blossom water
  • 1 tbsp softened butter or neutral oil
  • For the dough: 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/4 cup neutral oil
  • 1/2 cup water
  • 1 tbsp orange blossom water
  • 1 egg white or 1 tbsp water, for sealing

Instructions

    Grind the almonds with sugar until very fine, then mix with cinnamon, orange blossom water, and butter or oil to form a moist paste.

    Shape the filling into small logs tapered at the ends to resemble horns.

    Mix the flour, salt, oil, water, and orange blossom water into a smooth dough, then let it rest 20 minutes.

    Roll the dough out very thinly, almost translucent, and cut into strips or rectangles.

    Place a filling log on each piece of dough and wrap the dough around it to form a crescent, sealing the edges with egg white or water.

    Trim neatly and pinch closed so the filling is fully enclosed.

    Arrange on a baking sheet and bake at low heat until firm and lightly crisp but still pale, about 20 to 25 minutes.

    Cool completely before serving so the pastry sets around the fragrant almond center.

Kosher notes

Usually pareve if made with oil rather than butter. Check orange blossom water and almonds for reliable kosher certification.
