A rice-based Persian Jewish gondi, often served in broth as a soothing soup. Ground rice or rice flour gives these dumplings a softer, lighter texture than chickpea-flour versions.

Ingredients

  • 1 pound ground chicken or turkey
  • 3/4 cup rice flour
  • 1 small onion, finely grated
  • 1 large egg
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon black pepper
  • 1 1/2 teaspoons kosher salt
  • 8 cups chicken broth
  • 2 dried limes, pierced
  • 2 tablespoons chopped dill or parsley

Instructions

    Mix the ground poultry, rice flour, onion, egg, turmeric, cardamom, pepper, and salt in a bowl until uniform.

    Knead the mixture for several minutes until it holds together well, then rest it for 15 minutes.

    Shape into walnut-size or slightly larger dumplings with wet hands.

    In a pot, bring the chicken broth to a gentle simmer with the dried limes.

    Carefully lower the dumplings into the broth and keep the heat low so they poach rather than boil hard.

    Cook for 25 to 30 minutes, until the dumplings are tender and fully cooked through.

    Taste the broth, adjust seasoning, and finish with chopped herbs before serving.

Kosher notes

Meat soup. Confirm the broth is kosher and omit any dairy garnish.
