Crispy fried pastries shaped like 'elephant ears,' traditionally shared during Purim. The Bukharan version fits into a wider Central Asian and Persianate family of festive fried sweets.
Ingredients
- •2 cups all-purpose flour
- •1/2 tsp kosher salt
- •2 tbsp sugar
- •2 tbsp oil
- •1/2 cup water, plus more if needed
- •oil for deep-frying
- •1 cup powdered sugar for dusting
Instructions

In a bowl, combine the flour, salt, and sugar.

Add the oil and water and mix until a firm but workable dough forms.

Knead the dough for several minutes until smooth, then cover and let it rest for 30 minutes.

Divide the dough into small portions and roll each one very thin.

Stretch or shape the pieces into broad ovals or irregular 'elephant ear' forms.

Heat several inches of oil in a deep pan until hot but not smoking.

Fry the dough pieces one or two at a time until puffed, golden, and crisp, turning once as needed.

Drain on paper towels and dust generously with powdered sugar before serving.
Kosher notes
Traditionally pareve when fried in vegetable oil. For Purim service, keep separate from dairy or meat meal service as desired.
