Halkoom

A sticky, chewy Syrian Jewish sweet made with sesame seeds and honey or sugar, prepared for celebrations and holidays. It resembles a brittle-meets-chew confection and is valued for its simple ingredients and long keeping quality.

Ingredients

  • 2 cups sesame seeds
  • 1 cup honey or sugar
  • 2 tbsp water
  • 1 tbsp lemon juice
  • 1/4 tsp ground cinnamon, optional
  • Pinch of salt

Instructions

    Toast the sesame seeds in a dry skillet over medium heat until fragrant and lightly golden.

    In a saucepan, combine the honey or sugar with water, lemon juice, and salt and cook until thick and bubbling.

    Stir in the toasted sesame seeds and cinnamon if using.

    Cook the mixture for 1 to 2 minutes more, stirring constantly, until glossy and cohesive.

    Spread onto a parchment-lined tray or into a lightly oiled pan and press flat.

    Let cool until just firm, then cut into small diamonds or squares.

    Allow to cool completely before storing or serving.

Kosher notes

Naturally pareve when made with pure honey or sugar and no butter. Check sesame seeds carefully for quality and cleanliness.
