A dense, sweet confection made from tahini and sugar syrup, often studded with pistachios. It appears both in holiday settings and in ordinary Persian Jewish hospitality.

Ingredients

  • 1 cup tahini
  • 3/4 cup sugar
  • 1/4 cup water
  • 1 teaspoon lemon juice
  • 1/4 teaspoon ground cardamom
  • 1/3 cup chopped pistachios

Instructions

    Line a small loaf pan or container with parchment.

    In a small saucepan, cook the sugar, water, and lemon juice until the sugar dissolves and the syrup thickens slightly.

    Warm the tahini gently in a bowl and stir in the cardamom.

    Pour the hot syrup into the tahini in a thin stream, mixing continuously until thick and opaque.

    Fold in the pistachios.

    Press the mixture into the prepared pan and let it cool completely.

    Slice and serve once firm.

Pareve. Use kosher tahini and nuts; suitable after either meat or dairy meals.
