Hamantaschen

Triangular Purim pastries shaped like the three-cornered hat (or ears) of the villain Haman, filled with poppy seeds, prune jam, or apricot. A beloved tradition in Ashkenazi households, these cookies mark the joyful holiday of Purim and have been baked in Germany and Poland for centuries.

Ingredients

  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup sugar
  • 1 cup cold butter or margarine
  • 2 eggs
  • 1 tsp vanilla
  • 2 tbsp orange juice
  • Filling: 1 cup poppy seed filling (mohn) or thick prune jam

Instructions

    Whisk flour, baking powder, salt, and sugar. Cut in cold butter until crumbly.

    Beat eggs with vanilla and orange juice. Add to flour mixture; mix until dough forms.

    Wrap in plastic and refrigerate 1 hour.

    Roll dough to 3mm. Cut into 8cm circles.

    Place 1 tsp filling in the center of each circle.

    Fold three edges up and over the filling, pinching corners tightly to form a triangle.

    Bake at 180°C for 15–18 minutes until lightly golden.

    Cool completely before eating. They keep well for 5 days in an airtight container.

Kosher notes

Use margarine for pareve version — then can follow a meat Purim feast.
