Sephardic slow-cooked eggs braised overnight until tan and deeply flavored, traditionally tucked into Sabbath stews or cooked with onion skins and spices.
Ingredients
- •8 large eggs
- •1 onion, quartered
- •Peels from 2 yellow onions
- •1 tablespoon olive oil
- •1 teaspoon kosher salt
- •1/2 teaspoon ground cumin
- •1/2 teaspoon black pepper
- •1 teaspoon instant coffee, optional
Instructions

Place the eggs in a saucepan with the onion, onion skins, olive oil, salt, cumin, pepper, and coffee if using.

Add enough water to cover the eggs by 1 inch.

Bring to a gentle simmer, then cover tightly.

Cook on the lowest possible heat for 6 to 8 hours, adding water if needed to keep the eggs covered.

Cool slightly, peel, and serve warm or at room temperature.
