Harissa (Adaptation)

A North African Jewish chili paste brought into modern French-Jewish cooking by postwar immigrants. Built from dried chiles, garlic, coriander, caraway, and olive oil, it functions as a bold condiment for couscous, fish, and meat.
Ingredients
- •12 dried red chili peppers, stemmed
- •4 garlic cloves
- •1 tbsp ground coriander
- •1 tbsp ground caraway
- •1 tsp ground cumin
- •1 tsp kosher salt
- •1/2 cup olive oil
- •1 tbsp lemon juice
Instructions

Soak the dried chilies in hot water for 20 minutes until softened, then drain.

Place the chilies, garlic, coriander, caraway, cumin, and salt in a food processor or mortar.

Blend or pound the mixture into a coarse paste.

Add the lemon juice and slowly work in the olive oil until the paste is thick and spoonable.

Taste and adjust the salt or oil as needed.

Pack into a clean jar and cover the surface with a thin film of olive oil.

Serve with couscous, grilled fish, roasted vegetables, or meat dishes.
Kosher notes
Naturally pareve. Check that any commercially dried spices are kosher-certified if required.
