A frothy Yemenite fenugreek condiment, lightly bitter and aromatic, traditionally served with breads, soups, and Sabbath dishes.
Ingredients
- •3 tablespoons fenugreek seeds
- •1/4 cup water, plus more for soaking
- •2 tablespoons lemon juice
- •1 garlic clove
- •1 small tomato, grated, optional
- •1/2 teaspoon kosher salt
- •1/4 teaspoon ground cumin
Instructions

Soak the fenugreek seeds overnight in plenty of water, then drain.

Blend or whisk the soaked seeds with fresh water until thick and foamy.

Mix in the lemon juice, garlic, tomato if using, salt, and cumin.

Let the dip stand for a few minutes so the flavors meld.

Serve in small bowls alongside bread or stew.
