Stuffed cabbage rolls filled with minced meat and rice, braised in a sweet-sour tomato sauce and traditionally associated with Sukkot and Simchat Torah.

Ingredients

  • 1 large green cabbage
  • 1 pound ground beef
  • 1/2 cup uncooked rice
  • 1 small onion, grated
  • 1 egg
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 3 cups tomato sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons lemon juice

Instructions

    Core the cabbage and blanch it in boiling water, peeling off softened leaves as they loosen.

    Mix the beef, rice, grated onion, egg, salt, and pepper in a bowl.

    Place some filling in each cabbage leaf and roll tightly, tucking in the sides.

    Arrange the rolls in a pot and pour over the tomato sauce mixed with brown sugar and lemon juice.

    Cover and simmer gently until the cabbage is tender and the filling is cooked through.

Kosher notes

Keep the sweet-sour sauce meat-friendly by avoiding butter or cream.
