Stuffed cabbage rolls that celebrate harvest abundance and are often associated with Sukkot. This Eastern Ashkenazi version uses cabbage leaves filled with beef and rice, then simmered in a tangy tomato sauce.

Ingredients

  • 1 large green cabbage
  • 1 pound ground beef
  • 1/2 cup uncooked rice
  • 1 medium onion, finely chopped
  • 1 egg
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon oil
  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons brown sugar
  • 2 tablespoons lemon juice
  • 1 cup water

Instructions

    Bring a large pot of water to a boil and carefully blanch the whole cabbage, peeling off softened leaves as they loosen. Set aside 12 large leaves.

    In a bowl, mix the ground beef, rice, half the chopped onion, egg, 1 teaspoon salt, pepper, and paprika.

    Trim the thick rib from each cabbage leaf and place a portion of filling near the base of the leaf.

    Fold in the sides and roll each leaf tightly into a neat packet.

    Heat the oil in a deep pot and sauté the remaining onion until soft. Add the crushed tomatoes, tomato paste, brown sugar, lemon juice, water, and remaining salt.

    Arrange the cabbage rolls seam-side down in the sauce, spoon some sauce over the top, cover, and simmer gently for 1 1/2 to 2 hours until the rice is tender and the cabbage is very soft.

    Serve hot with plenty of sauce.

Kosher notes

As a meat dish, it should not be served with dairy accompaniments. Some Jewish versions sweeten the sauce slightly, while others sharpen it with sauerkraut or extra lemon.
