A dense Sephardic charoset of fruits, nuts, spices, and wine or juice, representing the mortar of slavery on the Seder plate. The Iberian style emphasizes pears, figs, dates, raisins, pistachios, hazelnuts, ginger, and cloves.

Ingredients

  • 2 ripe pears, peeled and chopped
  • 1 cup dried figs, chopped
  • 1 cup pitted dates
  • 1/2 cup raisins
  • 1/3 cup pistachios
  • 1/3 cup hazelnuts
  • 1/4 teaspoon ground ginger
  • 1 pinch ground cloves
  • 1/4 cup sweet red wine or grape juice

Instructions

    Toast the pistachios and hazelnuts lightly, then cool them.

    Place the pears, figs, dates, and raisins in a food processor.

    Add the nuts, ginger, cloves, and wine or grape juice.

    Pulse until the mixture forms a thick, coarse paste; add a little more liquid only if needed.

    Transfer to a bowl and let the flavors meld for at least 30 minutes.

    Taste and adjust with a little more wine, juice, or spice if desired.

    Serve as part of the Passover Seder, either mounded on a plate or in small bowls.

Kosher notes

Pareve and appropriate for Passover when all dried fruit, nuts, and wine or juice are certified kosher for Passover.
