S-shaped Venetian cookies filled with sweet almond paste, associated with Sephardic Jewish heritage in Venice. Their nutty filling and elegant shape make them a distinctive festive biscuit.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup extra-virgin olive oil
  • 2 large eggs
  • 1 teaspoon lemon zest
  • 7 ounces almond paste
  • 2 tablespoons water or orange blossom water
  • 1/4 teaspoon kosher salt

Instructions

    Make the dough by mixing the flour, sugar, salt, olive oil, 1 egg, and lemon zest until smooth; chill if sticky.

    In a small bowl, soften the almond paste with the water or orange blossom water until spreadable.

    Roll the dough into a rectangle on a lightly floured surface.

    Spread or pipe a line of almond paste along the center and fold or roll the dough around it into a cylinder.

    Cut into portions and gently shape each piece into an S.

    Place on a lined baking sheet and brush with the remaining beaten egg.

    Bake at 350°F/175°C for 18 to 20 minutes, until lightly golden and crisp at the edges.

    Cool before serving.

Kosher notes

Keep the pastry pareve by using olive oil instead of butter. Check that the almond paste contains no non-kosher additives.
