Kasha varnishkes

A classic Ashkenazi comfort dish pairing toasted buckwheat groats with bow-tie pasta, caramelized onions, and often mushrooms. Though simple, it is deeply savory and has long been served on Shabbat tables and weekday family meals alike.

Ingredients

  • 1 cup buckwheat groats
  • 1 egg, beaten
  • 8 oz bow-tie pasta
  • 2 large onions, sliced
  • 8 oz mushrooms, sliced
  • 3 tbsp vegetable oil
  • 2 cups vegetable stock or water
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

    Toss the buckwheat groats with the beaten egg until lightly coated.

    Cook the coated groats in a dry skillet over medium heat, stirring, until the grains separate and smell nutty.

    Bring the stock or water to a simmer, add the toasted groats, cover, and cook until tender, about 15 minutes.

    Meanwhile, boil the bow-tie pasta until just tender and drain.

    In a large skillet, cook the onions in oil until deeply golden, then add the mushrooms and sauté until softened.

    Combine the cooked kasha, pasta, onions, and mushrooms in the skillet and season with salt and pepper.

    Cook together for 2 to 3 minutes so the flavors meld, then serve warm.

Kosher notes

Pareve version uses oil rather than butter, making it suitable with meat meals.
