Spiced Sephardic meatballs reflecting medieval Iberian technique filtered through Ottoman flavors. In Turkish Jewish kitchens they are often served in a tangy lemony tomato broth as a ritual or Sabbath dish.

Ingredients

  • 1 pound ground beef or lamb
  • 1 small onion, finely grated
  • 1/4 cup chopped parsley
  • 1 large egg
  • 1/3 cup matzah meal
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon sweet paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cups crushed tomatoes
  • 2 cups beef or chicken broth
  • 2 tablespoons fresh lemon juice

Instructions

    In a bowl, combine the ground meat, onion, parsley, egg, matzah meal, garlic, cumin, paprika, salt, and pepper.

    Mix gently until just combined, then let the mixture rest for 10 minutes so the matzah meal can absorb moisture.

    Shape the mixture into small patties or oval meatballs with damp hands.

    Heat the olive oil in a wide pot and add the crushed tomatoes and broth.

    Bring the broth to a gentle simmer and season with the lemon juice.

    Slip the keftes into the simmering broth, cover, and cook gently until firm and cooked through, about 20 minutes.

    Taste the broth and adjust with more salt or lemon if needed.

    Serve hot with some of the broth spooned over the top.

Kosher notes

Use only kosher-certified meat. Because this is a meat dish, do not serve with dairy sides or garnish.
