Meatball croquettes served in a signature thick, creamy nut sauce. In the Greek Jewish Sephardic tradition of Salonica, this dish combines spiced meatballs with a rich walnut-parsley sauce reminiscent of Iberian and Ottoman Jewish flavor profiles.

Ingredients

  • 1 lb ground beef or lamb
  • 1 small onion, finely grated
  • 2 tbsp chopped fresh parsley
  • 1 egg
  • 1/3 cup matzah meal or breadcrumbs
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground cumin
  • 3 tbsp olive oil, for frying
  • 1 1/2 cups walnuts, finely ground
  • 1/4 cup chopped fresh parsley
  • 1 1/2 cups beef or chicken broth
  • 2 tbsp lemon juice
  • 1 clove garlic, minced

Instructions

    In a bowl, combine the ground meat, grated onion, parsley, egg, matzah meal, salt, pepper, and cumin.

    Mix gently until just combined, then form into small meatballs or oval croquettes.

    Heat the olive oil in a wide skillet and lightly brown the meatballs on all sides; remove and set aside.

    In a saucepan, combine the ground walnuts, chopped parsley, garlic, broth, and lemon juice.

    Cook the sauce over low heat, stirring frequently, until thick and creamy.

    Return the meatballs to the sauce and spoon the sauce over them evenly.

    Cover and simmer gently for 15 to 20 minutes, until the meatballs are fully cooked and the flavors meld.

    Serve warm with bread, rice, or other Sabbath side dishes.

Kosher notes

Use kosher-slaughtered beef or lamb. If serving on Shabbat, pair with pareve sides. Avoid dairy accompaniments.
