A classic Syrian Jewish dish of bulgur and meat formed into shells or patties, often stuffed with spiced onions and fried or baked.
Ingredients
- •1 cup fine bulgur wheat
- •1 pound ground beef or lamb, divided
- •1 onion, finely chopped
- •2 tablespoons pine nuts
- •1 teaspoon allspice
- •1 teaspoon kosher salt
- •1/2 teaspoon black pepper
- •2 tablespoons neutral oil
Instructions

Soak the bulgur until softened, then drain very well.

Process or knead the bulgur with half the ground meat, salt, and pepper into a smooth shell mixture.

Cook the onion in oil, add the remaining meat, pine nuts, and allspice, and sauté until browned.

Form oval shells from the bulgur mixture, fill with the meat mixture, and seal carefully.

Fry or bake until browned and cooked through.
Kosher notes
Use kosher lamb or beef and separate from dairy side dishes.
