A Syrian Jewish Passover meat pie inspired by kibbeh, replacing bulgur with soaked matzo for a tender layered casserole.

Ingredients

  • 6 sheets matzo
  • 1 1/2 pounds ground beef or lamb
  • 1 onion, finely chopped
  • 1/4 cup pine nuts
  • 1 teaspoon allspice
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

    Soak the matzo sheets briefly in water and squeeze gently so they are pliable but not falling apart.

    Cook the onion in oil, then add the meat, pine nuts, allspice, salt, and pepper and sauté until browned.

    Line a greased baking dish with half the softened matzo.

    Spread the meat filling evenly over the matzo and top with the remaining matzo.

    Bake until set and lightly browned, then rest before cutting into squares.

Ideal for Passover when using kosher-for-Passover matzo and seasonings.
