A dense unleavened Ethiopian flatbread cooked on a griddle, used by Beta Israel during Passover in place of fermented breads.
Ingredients
- •2 cups wheat flour
- •3/4 cup water
- •1/2 teaspoon kosher salt
- •1 tablespoon oil, optional
Instructions

Mix the flour, salt, and water into a firm dough.

Knead briefly until smooth, then divide into portions.

Roll or pat each portion into a round flatbread.

Cook on a hot dry skillet or lightly oiled griddle until browned in spots on both sides.

Serve warm, or cool and wrap to keep soft.
